This perfectly comforting oatmeal has quickly become one of my most-loved breakfasts this winter! Warming, creamy and cozy (not to mention healthy!) this quick and easy recipe is a perfect Christmas morning (or anytime) breakfast.

Oh, the magic of a one-pot meal… especially when it’s incredibly satisfying, quick to make start-to-finish, and super nutritious! Enter, this Creamy & Nutty Spiced Oatmeal, folks. Packed full of gut-friendly fibre (I’m looking at you, oats, chia and flax!), protein and healthy fats (sunflower seed butter, walnuts and pecans), and antioxidant-rich spices, this breakfast has it all.

  • Gluten-Free Rolled Oats: Cholesterol-lowering and blood sugar stabilizing goodness!
  • Chia Seeds & Ground Flax Seeds: Acts as a fibre-rich thickener, making our oats even creamier (and healthier!).
  • Sunflower Seed Butter & Oat Milk: Our extra dreamy and creamy liquid base.
  • Raisins, Chopped Walnuts & Pecans: These sweet and crunchy mix-ins add extra yummy texture.
  • Maple Syrup: Our yummy sweetener adds just the right amount of sweetness.
  • Warming Spices: Cinnamon, Cardamom, Allspice, Cloves and Nutmeg add a Chai-like depth of flavour and spice.

How to Make Creamy & Nutty Spiced Oatmeal

This recipe may sound extra fancy, but it’s actually quite simple to whip up! It’s really as easy as adding everything into a pot, and simmering until the oats are cooked. And yet, magic is born! Just 15 minutes to creamy heaven.

  1. In a saucepan add the plant milk, spices, maple syrup, and nut/seed butter and whisk until well combined and the spices become dissolved.
  2. Bring the mixture to a steaming simmer on medium-high heat, then add the oats, chia seeds, ground flax, salt and raisins and mix until well combined. Turn heat down to low and let simmer for about 10 minutes until the oats are completely cooked and creamy, stirring often.
  3. Serve with sliced banana or apple and chopped walnuts and pecans, and an extra drizzle of plant milk if you like. Enjoy!

You can easily double the recipe when making Creamy & Nutty Spiced Oatmeal. This also makes it great for meal prep! Just portion it out into containers and enjoy it throughout the week. These oats will keep in the fridge for up to 5 days.

Creamy & Nutty Spiced Oatmeal | Vegan & Gluten-Free

Ingredients
  

  • 1 cup gluten-free rolled oats
  • 2 cups plant milk (I used unsweetened oat)
  • 3 tbsp nut/seed butter (I used sunflower)
  • 2 tbsp ground flax seeds
  • 2 tbsp chia seeds
  • 2 tbsp maple syrup (3 tbsp if you want sweeter)
  • 1/3 cup raisins
  • pinch of salt
  • 1/3 cup chopped walnuts and/or pecans (for topping)
  • 1 banana or apple, sliced (for topping)

Spice Blend

  • 1 tsp cinnamon
  • 1/2 tsp cardamom
  • 1/2 tsp allspice
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves

Instructions
 

  • In a saucepan add the plant milk, spices, nut/seed butter and maple syrup and whisk until well combined and the spices and nut butter has dissolved. This may take a minute of whisking!
  • Bring the heat to an almost-boil on medium-high heat. Then add the oats, chia seeds, ground flax, raisins and salt and mix with a large spoon until well combined.
  • Bring the heat down to low and let simmer for about 10 minutes until the oats are completely cooked and creamy, stirring every couple minutes to prevent burning.
  • Once cooked, remove the saucepan from the heat. Serve with sliced banana or apple, chopped nuts and a drizzle of milk. Feel free to add any of your other favourite toppings and mix-ins: shredded coconut, chocolate chips and other nuts/seeds would be awesome, too! Enjoy!

Notes

This recipe can serve either 2-4 servings, depending on how you portion it out. If you don’t add any toppings like fruit or nuts, portioning it out in 2 servings would certainly make for a filling bowl. If you do add fruit and nuts, dividing it into 4 servings is plenty filling with the toppings!
