Gingerbread is one of those classic holiday flavours that happens to pair perfectly with a warm bowl of creamy oatmeal.

Just a handful of festive spices and pantry essentials is all that’s required to create this delicious Gingerbread Oatmeal. Bonus points if you have some homemade gingerbread cookies on hand!

  • Gluten-Free Rolled Oats: Cholesterol-lowering and blood sugar-balancing wholesomeness!
  • Unsweetened Vanilla Oat Milk: Our creamy base for this recipe.
  • Chia Seeds & Ground Flax Seeds: A gut-healthy source of fibre and thickener for our oatmeal.
  • Brown Sugar & Molasses: The essential sweet, rich and deep undertones of classic gingerbread.
  • Tasty Warming Spices: Cinnamon, Ginger and Cloves add delicious and fragrant depth of flavour.

How to Make Gingerbread Oatmeal

If you’ve got 15 minutes, then you’ve got time to whip up a batch of this cozy hug-in-a-bowl. It’s easy enough for even a ‘non-cook’ to make – just add all your ingredients into a saucepan and simmer away into a warm, gingerbread heaven.

  1. In a saucepan add the milk, spices, molasses and brown sugar and whisk until well combined and the spices are dissolved.
  2. Bring to a gentle boil then add the oats, chia seeds, ground flax and salt and mix until combined. Bring the heat down to low and and let simmer for about 10 minutes until the oats are completely cooked and creamy, stirring often.
  3. Serve with an extra drizzle of oat milk and some chopped gingerbread cookies (optional, but delicious). Enjoy!

Gingerbread Oatmeal | Vegan & Gluten-Free

Ingredients
  

  • 1 cup gluten-free rolled oats
  • 2 cups plant milk (I used oat)
  • 2 tbsp brown sugar
  • 2 tbsp molasses
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/4 tsp cloves
  • 1 pinch salt
  • 2 tbsp chia seeds
  • 2 tbsp ground flax seeds
  • chopped gingerbread cookies (optional topping)

Instructions
 

  • In a saucepan add the milk, spices, brown sugar and molasses and whisk until well combined and the spices are dissolved. This will take a minute of whisking!
  • Bring to a gentle almost-boil and add the oats, chia seeds, ground flax and salt and mix until well combined.
  • Bring heat down to low and let simmer for about 10 minutes until the oats are completely cooked and creamy, stirring every couple minutes to prevent burning.
  • Serve with an extra drizzle of milk and top with chopped gingerbread cookies (optional, but highly recommended!). Some other delicious toppings would be fresh sliced apple, banana, or chopped nuts, chocolate chips or raisins. Enjoy!

Notes

This recipe can make between 2-4, depending on how you portion it out. Without any toppings, dividing into 2 servings would make for a very filling bowl. With the addition of fresh fruit and nuts, portioning it into 4 servings would be plenty filling!
