I’m such a fan of piña coladas so when it’s just a little too early to pull out the blender and drink mixes, these tropical and tasty Piña Colada Overnight Oats are a pretty delicious alternative.

  • Rolled Oats: They take on the loveliest soft and chewy texture after soaking overnight.
  • Ground Flax or Chia Seeds: For extra fibre, nutrition and to make the oats creamier.
  • Fresh Pineapple Chunks: the shining, citrusy star of this recipe!
  • Lite Canned Coconut Milk & Coconut Yogurt: Our liquids that provide a deliciously tropical, creamy base.
  • Maple Syrup & Vanilla: For natural sweetness and fragrant flavour.
  • Crunchy Coconut Toppings: Choose either toasted coconut flakes for a warmer flavour, or shredded coconut for a sweeter, fresher burst of flavour!

WHY WE LOVE OVERNIGHT OATS

So, word on the street is that overnight oats are still in… and I’m okay with that! They’re one of the best breakfasts for a few reasons:

  1. They’re cold soaked which is ideal on those warmer summer mornings
  2. They’re fast to make the night before (hence the name ‘overnight oats’) and you can prepare several batches at once to enjoy throughout the week
  3. They’re inexpensive – chances are you probably already have most of the basics in your fridge and pantry
  4. They’re delicious and totally customizable — there’s literally a million-and-one ways to make them fit your diet or flavour preferences

HOW TO MAKE PIÑA COLADA OVERNIGHT OATS

These Piña Colada Overnight Oats come together in just one bowl or jar, and couldn’t be simpler to whip up!

  1. Add all the the ingredients into a bowl or mason jar, and stir very well until they’re throughly combined.
  2. Top with extra chunks of pineapple and shredded or toasted coconut flakes and cover with the lid.
  3. Place in the fridge overnight (or for a minimum of 4 hours), wake up and enjoy your delicious breakfast!

COME WITH ME AND ESCAPE 🍍

These Piña Colada Overnight Oats are such a treat, plus they’re a great way to get the most out of seasonal summer fruit! You could also use frozen pineapple, or add sliced or mashed banana for extra tropical vibes. Feel free to try different flavours of non-dairy yogurt, add a splash of orange or lemon juice, or some strawberries for a daiquiri-type flavour! The possibilities are only limited by your imagination.

Ingredients
  

  • ½ cup (heaping) rolled oats (gluten-free if necessary)
  • cup non-dairy coconut yogurt
  • cup lite canned coconut milk
  • cup chopped fresh pineapple
  • 1 tbsp ground flax seeds or chia seeds
  • 2 tbsp shredded unsweetened coconut
  • ½ tsp vanilla extract
  • 1-2 tbsp maple syrup
  • pinch of salt
  • extra shredded and/or toasted coconut flakes for topping

Instructions
 

  • To a bowl or mason jar, add the oats, ground flax seed, shredded coconut, chopped pineapple, lite coconut milk, vanilla extract, maple syrup and coconut yogurt. Give that a really good stir until everything is well combined. 
  • Add any and all desired toppings and leave in the fridge overnight or for a minimum of 4 hours. I like to use toasted coconut flakes and fresh pineapple chunks, but if you want it less sweet or with more chewy bits, add some extra unsweetened shredded coconut or skip the extra pineapple. Banana slices would be really yummy here too for some extra tropical vibes.
