Sheet Pan Tofu Burritos (Easy High-Protein Meal Prep)

These easy high-protein Sheet Pan Tofu Burritos are smoky, savoury, packed with veggies and protein, and made almost entirely on two sheet pans. They’re freezer-friendly, meal-prep friendly, bursting with zesty taco flavours, and clock in at around 25g of protein each β€” without turning your kitchen into a taco-filling assembly line.

Inspiration & Ingredients

I wanted a burrito that was high-protein, affordable, easy to meal prep, and actually freezer-friendly. My original meal prep burritos were a hit, but I figured I could find a way to make them even easier to make with less steps.

So we’re taking things to the sheet pan. The tofu gets roasted until it’s chewy, meaty and browned, the peppers, onions, jalapeΓ±os and corn get caramelized and slightly charred, and then everything gets tossed with a concentrated taco seasoning mixture before one final roast.

The result is a seriously flavourful, surprisingly simple filling that holds up beautifully in the freezer!

Here’s what you need:

Tofu Taco Filling
  • 4 (340g) blocks extra-firm tofu, drained and lightly pressed
  • 2 medium yellow onions, diced
  • 3 bell peppers, diced
  • 2 jalapeΓ±os, finely diced
  • 1Β½ cups frozen corn, thawed
  • 3 tbsp tomato paste
  • 2 tbsp soy sauce or tamari
  • 2 tbsp nutritional yeast
  • 2 tbsp water
  • Juice of 1 lime
  • 2 tsp chili powder
  • 2 tsp smoked paprika
  • 2 tsp ground cumin
  • 1Β½ tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • Β½ tsp salt
  • ¼–½ tsp cayenne pepper, to taste
  • Cooking spray or 1 tbsp oil, optional
For Assembly
  • 10 large whole wheat tortillas
  • shredded vegan cheese, optional
For serving
  • Salsa
  • Hot sauce
  • Fresh lime
  • Avocado
  • Vegan sour cream

Why You’ll love These burritos

  • They’re ridiculously easy β€” Everything happens on two sheet pans, with no standing over a skillet making tofu in batches.
  • They’re high in protein – Each burrito has approximately 24g of plant-based protein.
  • They’re freezer-friendly – Make ten at once and future-you gets ten easy lunches.
  • They’re budget-friendly -Tofu, tortillas, frozen corn and inexpensive vegetables keep these much cheaper than most ready-made high-protein meals.
  • They’re NOT soggy – The filling is roasted until the excess moisture cooks away, and the salsa stays on the side where it belongs.
  • They’re packed with whole-food plant goodness – You get protein from tofu, fibre from the veggies and whole-wheat tortillas, plus plenty of flavour without needing a ton of oil.

How to Make Sheet Pan Tofu Burritos

Instructions
  1. Roast the tofu: Preheat your oven to 425Β°F and line two large sheet pans with parchment paper.
  2. Drain the tofu and lightly press it to remove excess water. You don’t need to press it perfectly dry β€” the oven is going to do most of the work.
  3. Crumble the tofu into small, irregular pieces and divide between the two sheet pans. Spread it out into an even layer, then roast for 20 minutes. Remove the pans, toss the tofu, and return to the oven for another 10 minutes. We’re intentionally roasting the tofu before adding the sauce so it has a chance to lose its moisture and get nice and chewy.
  4. Make the taco seasoning paste: While everything is roasting, whisk together the tomato paste, soy sauce, nutritional yeast, water, lime juice and spices in a small bowl. You want a thick but spreadable seasoning mixture.
  5. Add the veggies and season: Carefully transfer the roasted tofu to the largest mixing bowl you have. Add the sliced onions, peppers, jalapeΓ±os and corn and all of the seasoning paste and give everything a toss (This is much easier than trying to stir a thick seasoning mixture into two packed sheet pans β€” trust me.) If desired, lightly spray with cooking spray or drizzle with a little oil.
  6. Return to the oven and roast for 15–20 minutes, tossing once halfway through, until the vegetables are browned and most of their moisture has cooked off.
  7.  Cool the filling: Let the filling cool for 15 – 20 minutes before assembling your burritos.
  8. Assemble the burritos: Warm each tortilla for about 10 seconds in the microwave to make it flexible. Divide the filling evenly between the 10 tortillas. If using vegan cheese, add about 1–2 tbsp to each. Fold the sides inward, then roll tightly from the bottom.
  9. And there you have it: ten burritos ready to take over your freezer.
How to Freeze And Reheat
  1. To freeze: Wrap each burrito individually in parchment paper (my preferred method) or foil, then place them in a freezer-safe bag or container. Freeze for up to 3 months for the best quality.
  2. From frozen: Remove any foil and wrap the burrito loosely in a damp paper towel. Microwave for 2½–3 minutes, flip, then microwave for another 1½–2 minutes, or until heated through. Let it sit for a minute before eating.
  3. For the crispiest burrito: Microwave from frozen until hot, then transfer to an air fryer and cook at 375Β°F for 4–6 minutes. The tortilla gets crispy, the edges get golden, and suddenly your meal-prepped freezer burrito is feeling very fancy.

tips for the Best Burritos

  1. Don’t skip the initial tofu roast. This is what helps give you that chewy, crumbly taco-meat texture instead of soft, watery tofu.
  2. Give everything room to breathe. If your sheet pans are crowded, use three pans rather than piling everything onto two. Crowding causes steaming instead of browning.
  3. Thaw the corn first. Frozen corn contains quite a bit of water, so thawing and draining it helps keep the filling nice and dry.
  4. Let the filling cool before rolling. Hot filling creates steam inside the tortilla, which can lead to soggy burritos.
  5. Keep the salsa on the side. Add it after reheating rather than before freezing. Your burrito will thank you.
  6. Want them spicy? Add extra jalapeΓ±o or cayenne, or drizzle with your favourite hot sauce after reheating.

Budget Breakdown

One of my favourite things about these burritos is that they’re actually affordable, especially for a meal with this much protein.

Prices will vary depending on where you shop, but using typical Canadian grocery prices, I estimate the entire batch at around $35–$40 CAD, or approximately: $3.50–$4 CAD per burrito, or ~$2.50–$3 USD per burrito.

And that’s using regular grocery-store ingredients β€” no fancy specialty products required.

How to make them even more budget-friendly

  1. Buy tofu on sale. Tofu prices can vary quite a bit between stores, and buying several blocks when they’re on sale makes a noticeable difference.
  2. Use whatever peppers are cheapest. Red, yellow, orange and green all work. You don’t need three different colours for a pretty Instagram filling.
  3. Frozen corn is your friend. It’s inexpensive, convenient, doesn’t spoil in your fridge, and is often cheaper than fresh corn.
  4. Buy onions in larger bags. They’re one of the cheapest vegetables around and you’ll use them constantly.
  5. Skip the vegan cheese. It’s completely optional. The burritos are plenty flavourful without it.
  6. Use pantry staples for seasoning. Chili powder, cumin, smoked paprika, garlic powder, onion powder and oregano are doing most of the flavour heavy lifting here, so there’s no need to buy a special taco seasoning packet.
Nutrition

Approximate nutrition per burrito, based on 10 burritos and using extra-firm tofu and large whole-wheat tortillas (I used Dempster’s, which you can buy in bulk from Costco!):

390–400 calories β€’ 24β€”28g protein β€’ 50g carbs β€’ 13g fat β€’ 9g fibre

Nutrition will vary depending on the specific tofu, tortillas and optional ingredients you use.

That’s a Wrap

Meal prep doesn’t need to mean eating the same yawn-inducing container of beans and rice five days in a row. Not in my house!

These high-protein tofu burritos are smoky, savoury, veggie-packed, freezer-friendly and β€” perhaps most importantly β€” they don’t require you to devote half of your precious day off to make them. Make a batch, stash them in the freezer, and you’ll always have a sexy little burrito waiting for you when hunger comes knocking.
