Ingredients & Inspiration

One of my favourite cuisines to cook (and eat!) is Mexican. I love their liberal use of chilis, spices, and fresh herbs in so many of their dishes, which is what inspired me to create this Chipotle Lime Tofu. Chipotle peppers in adobo sauce is a very commonly used ingredient in many Mexican sauces, marinades, and just the cuisine in general. It adds a uniquely bold smokiness that is hard to replicate! What I love about chipotles in adobo sauce is that I don’t find them to be overpoweringly spicy! One pepper goes a long way in a dish, and still adds a ton of smoky flavour.

The main flavour elements in this recipe are, as you may have guessed, chipotle, lime (used in EVERYTHING Mexican) and cilantro. It’s such a perfect marriage of bold, fresh and fragrant flavours, how could tofu not taste good with all that?

Here’s what you need to make this EPIC tofu recipe:

  • extra firm tofu: the perfect tofu for marinating as it acts like a flavour sponge
  • lime juice & zest: for the tropical Hawaiian vibes
  • chipotle peppers in adobo: to give a bold punch of smoky heat
  • soy sauce: adds the right amount of saltiness and umami
  • fresh garlic: the rich base of our BBQ sauce
  • smoked paprika & cumin: gives the classic BBQ smokiness and a touch of heat
  • red chili flakes: if you like a little extra kick
  • fresh cilantro: adds bright, fresh flavour

How to Make Chipotle Lime Tofu

This recipe for Chipotle Lime Tofu is as easy as whipping up an easy marinade, marinating the tofu and pan frying it until golden brown:

  1. In a jar combine the lime juice and zest, soy sauce, garlic, cumin, chili flakes and chopped cilantro. Add a tbsp or two of water if it’s too thick.
  2. Cut the tofu into 1” cubes and place in a square or rectangular container. Pour over the marinade, seal with a lid, give a few shakes and let marinate for at least 1 hour, or up to overnight, which will give the tofu more time to absorb most of the marinade.
  3. Warm 1 tbsp oil in a large skillet over medium heat and add the pieces of marinated tofu one by one. Brown each side of the tofu for 2 minutes and repeat until all pieces of tofu are cooked.
