What’s more comforting than pancakes in your PJ’s on the weekend? Oh, that’s right… nothing! These scrumptious 8-Ingredient Banana Blender Pancakes are sure to be the best part of your weekend routine!

What could be easier than throwing a few pantry staples into a blender? These fluffy stacks of pure happiness only take a couple minutes to whip up, and are healthy! No flour, no refined sugar, no dairy, no problem!

INGREDIENTS + INSPIRATION

Growing up many years ago, my grandma lived with my family, and every Sunday without fail, I’d smell the delicious aroma of banana pancakes drifting upstairs from her suite. There was literally nothing better! While I sure do miss my grandmas banana pancakes, I think I’ve come pretty close to something almost as awesome with this recipe.

Traditional pancakes are generally pretty easy to whip up (batter mix, milk, eggs), so I wanted to make sure my vegan and gluten-free version was just as simple and delicious!

  • Gluten-Free Rolled Oats replace the need for flour, plus they’re heart-healthy and full of fibre.
  • Ripe Banana gives a natural sweetness and that classic flavour we know and love!
  • Plant Milk: Any variety works, but my fave is unsweetened vanilla oat milk.
  • Apple Cider Vinegar + Baking Powder: ACV activates the baking powder to help give the batter lots of fluffiness.
  • Nut or Seed Butter: Add a yummy element of smoothness, flavour and a little extra protein and healthy fat.
  • Maple Syrup: Not just a topping! Add a touch to the batter for a touch of sweet mapley goodness.
  • Vanilla Extract adds a delicious fragrance and flavour that compliments the banana beautifully.

HOW TO MAKE 8-INGREDIENT BANANA BLENDER PANCAKES

These 8-Ingredient Banana Blender Pancakes are as easy as 1-2-3… literally!

  1. Add all of the ingredients into a high-speed blender. Secure the lid, and blend on high power for 30-45 seconds, until the batter is perfectly smooth and creamy.
  2. Let the batter sit for 5 minutes to allow the baking powder and ACV to fluff everything up. You should start to see some bubble forming on the surface.
  3. Pour 1/3 cup portions of batter into a hot greased skillet, and cook for 2-3 minutes on each side. Serve and top with maple syrup, fresh berries and a sprinkling of cinnamon and enjoy!

Equipment

  • High-Speed Blender

Ingredients
  

  • 1 cup gluten-free rolled oats
  • 1 ripe banana
  • 1/4 cup plant milk
  • 2 tsp baking powder
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tbsp nut or seed butter
  • 1 tbsp maple syrup

Instructions
 

  • In a high-speed blender, dump all of the ingredients and blend on high power until a thick batter consistency is reached, about 30-45 seconds. Let sit to thicken up a bit more for 5 minutes. You should start to see air bubbles forming.
  • Heat a non-stick skillet on medium-high heat and coat in baking spray or a thin layer of vegan butter.
  • Pour in about 1/3 cup of batter, and let cook on each side for about 2-3 minutes.
  • Stack and serve with your favourite toppings and LOTS of maple syrup. ENJOY!

Notes

Here are some of my favourite mix-ins and toppings you can experiment with if you’re feeling creative!
Mix-ins:
  • 1 tsp cinnamon or pumpkin pie spice
  • 1 tbsp cocoa or cacao powder
  • 1/3 cup vegan chocolate chips, mixed in after the batter has rested for 5 mins
  • 1 shredded carrot, mixed in after the batter has rested for 5 mins
Toppings:
  • fresh berries or banana slices
  • chopped walnuts or pecans
  • coconut whipped cream
  • extra cinnamon
