The combination of lemon and lavender has become pretty popular in food culture lately, and so has lavender and early grey… so why not mash all of these flavour combos together? Well that’s just what I did with these incredibly delicious Lemon Lavender Earl Grey Overnight Oats!

Lavender has been such an under utilized ingredient in my kitchen until recently. While it boasts a very strong floral scent, I’ve discovered that it can add such beautiful depth of flavour to so many types of dishes: breads, teas, cookies, ice cream, oatmeal… you name it!

  • Rolled Oats: They take on the loveliest soft and chewy texture after soaking overnight.
  • Ground Flax or Chia Seeds: For extra fibre, nutrition and to make the oats creamier.
  • Dried Lavender & Fresh Lemon Zest: a perfect combination of floral and citrus.
  • Earl Grey Tea: To compliment our citrus and floral flavours.
  • Non-dairy Milk & Yogurt: Our liquids that provide a deliciously creamy base.
  • Maple Syrup & Vanilla: For natural sweetness and fragrant flavour.
  • Fresh or Frozen Berries: Berries pair beautifully with all these fruity floral flavours.

HOW TO MAKE LEMON LAVENDER EARL GREY OVERNIGHT OATS

These Lemon Lavender Earl Grey Overnight Oats come together in just one bowl or jar, and couldn’t be simpler to whip up!

  1. Add all the the ingredients into a bowl or mason jar, and stir very well until they’re throughly combined.
  2. Top with fresh or frozen berries and optionally, extra lemon zest and lavender, and cover with the lid.
  3. Place in the fridge overnight (or for a minimum of 4 hours), wake up and enjoy your delicious breakfast!

WHY WE LOVE OVERNIGHT OATS

So, word on the street is that overnight oats are still in… and I’m okay with that! They’re one of the best breakfasts for a few reasons:

  1. They’re cold soaked which is ideal on those warmer summer mornings
  2. They’re fast to make the night before (hence the name ‘overnight oats’) and you can prepare several batches at once to enjoy throughout the week
  3. They’re inexpensive – chances are you probably already have most of the basics in your fridge and pantry
  4. They’re delicious and totally customizable — there’s literally a million-and-one ways to make them fit your diet or flavour preferences

FOR THE PRICE OF A CUP OF TEA…

Before settling into your morning breakfast routine, consider pairing these Lemon Lavender Earl Grey Overnight Oats with a hot cup of, you guessed it… earl grey tea, maybe? I don’t think you’ll be disappointed! As an optional but highly recommended addition, try topping with fresh or frozen berries. I used frozen mixed berries which overnight in the fridge, soften and melt, creating such a pretty hue and kind of makes it’s own little sauce. Just delicious. But if you don’t have berries, you can eat it as is and it will be just as delicious!

Lemon Lavender Earl Grey Overnight Oats

These Lemon Lavender Earl Grey Overnight Oats mash up some of the best flavour combinations, and will change your breakfast game forever!

Ingredients
  

  • ½ cup (heaping) rolled oats (gluten-free necessary)
  • cup non-dairy yogurt
  • cup non-dairy milk
  • cup strong brewed earl grey tea (with 1 tsp lavender)
  • 1 tbsp ground flax seeds or chia seeds
  • ½ tsp vanilla extract
  • zest of ½ a lemon
  • 1-2 tbsp maple syrup (depending how sweet you like)
  • tsp dried lavender
  • pinch of salt

Instructions
 

  • Start by brewing a really strong but small cup of earl grey tea with 1 teaspoon of dried lavender. You’ll only need 1/3 of a cup for this recipe.
  • To a bowl or jar, add the rolled oats, chia or ground flax seeds, dried lavender, lemon zest, nondairy milk, earl grey tea, vanilla extract, maple syrup, and nondairy yogurt. Give everything a really good stir until it’s a well combined mixture.
  • Transfer to a jar or keep in the bowl, and as an optional but highly recommended addition, top with fresh or frozen berries. I used frozen mixed berries which overnight in the fridge, soften and melt, creating such a pretty hue and kind of makes it’s own little sauce. But if you don’t have berries, you can eat it as is and it will be just as delicious.
