Start by brewing a really strong but small cup of earl grey tea with 1 teaspoon of dried lavender. You’ll only need 1/3 of a cup for this recipe.
To a bowl or jar, add the rolled oats, chia or ground flax seeds, dried lavender, lemon zest, nondairy milk, earl grey tea, vanilla extract, maple syrup, and nondairy yogurt. Give everything a really good stir until it’s a well combined mixture.
Transfer to a jar or keep in the bowl, and as an optional but highly recommended addition, top with fresh or frozen berries. I used frozen mixed berries which overnight in the fridge, soften and melt, creating such a pretty hue and kind of makes it’s own little sauce. But if you don’t have berries, you can eat it as is and it will be just as delicious.
