What makes a tasty rice dish even better? When it only needs 5 core ingredients and 10 minutes of your time to make. That’s why Mexican Rice is one of my all-time favourite rice recipes as it’s super simple to throw together on those days where the hanger is sky high and the motivation is critically low! Plus it’s a great way to use up a bunch of random leftovers in your fridge.
Here’s what you need:
- Cooked rice (any kind)
- Canned black beans
- Salsa
- Corn (fresh or frozen)
- Chilli powder
How to make Mexican Rice
I feel like I can scarcely even call Mexican Rice a recipe as the amounts of each ingredient are totally open to adjustment based on what you have in your fridge, plus there’s countless ways to tweak the dish to suit your palette!
- Heat a large skillet over medium heat and add a tbsp of oil (or ¼ cup of water if you’re oil-free)
- Add the canned black beans and corn, stir to combine and heat through for about 3 minutes or so.
- Add rice and chilli powder and stir through to combine. Heat through another 3 to 5 minutes, then remove the skillet from the heat.
- Serve with a lime wedge, some avocado chunks and a sprinkle of fresh cilantro and enjoy!
Tips: Feel free to change it up by adding some hot sauce or by adding extra veggies like red onion or bell peppers. The possibilities are endless!
Rice is Nice
Sometimes the simplest things are the most enjoyable in life, and that’s how I feel about this Mexican Rice. Nothing fancy, expensive or complicated, just real, whole foods doing some tasty stuff together.

Mexican Rice
Ingredients
- 1½ cups corn fresh, frozen or canned
- 2 12 oz cans of black beans
- 3 cups cooked rice refrigerated is best
- 1 cup salsa
- 1 tbsp chilli powder
- avocado, lime and cilantro for topping optional
Instructions
- Preheat a large skillet over medium heat. Add corn and black beans and heat through until it’s steaming and hot, about 3 mins.
- Add rice, chili powder, stir to combine frequently for 3 mins.
- Stir in salsa, cook until everything is warmed through.
- Remove from heat, let cool. Then garnish as you please! (cilantro, avocado, lime juice)
