Mexican Rice

You only need 5 simple ingredients and 10 minutes to make the most delicious Mexican Rice! A perfect hearty side dish to complement your favourite Mexican recipes, or fabulous as a meal on it's own.

Ingredients
  

  • cups corn fresh, frozen or canned
  • 2 12 oz cans of black beans
  • 3 cups cooked rice refrigerated is best
  • 1 cup salsa
  • 1 tbsp chilli powder
  • avocado, lime and cilantro for topping optional

Method
 

  1. Preheat a large skillet over medium heat. Add corn and black beans and heat through until it’s steaming and hot, about 3 mins.
  2. Add rice, chili powder, stir to combine frequently for 3 mins.
  3. Stir in salsa, cook until everything is warmed through.
  4. Remove from heat, let cool. Then garnish as you please! (cilantro, avocado, lime juice)
