Ingredients & Inspiration
Over the last couple years I’ve been experimenting with various vegan sausage recipes, which resulted in some pretty tasty results: Enter, my Vegan Sausages and Vegan Breakfast Sausages. Seriously, they’re the best-tasting plant-based sausages I’ve ever had and if you haven’t tried them yet, go! RUN to your kitchen now!
Next up, it only makes sense to have another variation of delicious vegan sausage that can be used in a multitude of ways, Vegan Sausage Crumbles! By using TVP, you get perfectly crumbled, meaty morsels that look like meat, have the same texture as meat, and with some simple seasonings, taste like meat!

TVP, aka textured vegetable protein, is de-fatted soybean flour, which is then processed into little dehydrated chunks that, once rehydrated again, make for an incredible high-protein plant-based meat alternative. Check out my Mapo Tofu recipe for more inspiration on how to use TVP!
The rest of the ingredients are super simple and pantry-friendly, meaning you likely have most of them in your kitchen already:
- 3 tbsp low-sodium soy sauce or tamari
- 1 tbsp maple syrup
- 2 tsp smoked paprika*
- 1½ cups dry TVP
- 1¼ to 1¾ cups boiling water
- ¼ cup nutritional yeast
- 1 tbsp Italian seasoning
- 2 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
- ¼ tsp red chili flakes
- 1 to 2 tbsp olive oil, for sautéing

How to Make Vegan Sausage Crumbles

Vegan Sausage Crumbles are very easy to make with minimal steps. Basically just season, soak and cook!
- Add the TVP, nutritional yeast and spices to a large bowl and mix to combine. Pour over the hot water and stir to combine. Let the TVP absorb the water for 5 minutes until plump. IMPORTANT NOTE: If you prefer more moist sausage (to add to sauces, casseroles or soups), use 1¾ cups hot water. For a somewhat dryer crumble (to add to pizzas, pastas, salads), start with 1¼ cups hot water and go from there; if there’s still some dry bits of TVP after stirring, add a bit more.
- Add the oil, soy sauce, maple syrup and to a frying pan and warm over medium heat until beginning to steam. Add the rehydrated TVP into the liquid ingredients in the pan and bring to medium-high heat. Stir well to combine and cook for 12 to 16 minutes, stirring and scraping the bottom with a spatula, until much of the moisture has evaporated, the TVP has begun to dry out and brown in spots, and crumbles/chunks are beginning to form.
- Once it’s reached your desired level of browning, remove the pan from the heat, let the sausage crumbles cool slightly and enjoy however you please!
