The answer: no one.

INGREDIENTS

The awesome thing about this vegan Baked Feta Tomato Pasta is that there’s no hard-to-find ingredients or strange cooking methods involved. With under 10 ingredients, this one-dish pasta is a super easy and inexpensive meal that the whole family will drool over!

  • Boxed Pasta Noodles: Try using penne, fusilli, shells or rotini, and of course gluten-free if you follow that diet.
  • Cherry or Grape Tomatoes: When roasted, these tiny tomatoes blister and release their delicious juices which makes the base of the sauce.
  • Olive Oil contributes to the overall creaminess and makes all the delicious flavours of this dish just pop.
  • Violife Vegan Feta Cheese: This rich, creamy and tangy ‘cheese’ adds the familiar tang and bite of traditional dairy-feta and melds with the tomato juice to create a velvety sauce.
  • Fresh Garlic & Lemon Zest: The garlic adds a fragrant savouriness while the lemon adds a bright and fresh tang that compliments the flavours of the vegan feta and tomatoes really well.
  • Italian Herbs: Dried Oregano and fresh Basil completes the dish with classic fragrant and peppery flavours.

HOW TO MAKE BAKED FETA TOMATO PASTA

This Baked Feta Tomato Pasta comes together in 1-2-3! All you do is add all the ingredients to a baking dish, and you guessed it, bake it! Quick and easy comfort food?! Count me in.

  1. Add the whole tomatoes, minced garlic, olive oil, lemon zest, oregano, salt and pepper to a baking dish. Stir well to combine.
  2. Create a well in the centre of the mixture and place the block of Violife vegan feta cheese inside. Bake in the oven on the top rack uncovered for 25-30 minutes, until the cheese has melted and the tomatoes have roasted and released their juices.
  3. Finally, add the cooked pasta directly into the casserole dish and mix until its well combined in the sauce. Garnish with additional fresh basil and enjoy!

This Baked Feta Tomato Pasta stands alone as a main meal but could also be served up with a fresh garden salad. Personally I enjoy it with a thick slice of crusty garlic bread (#carblover). Feel free to experiment with different varieties of grape or cherry tomatoes or different brands of vegan cheese.

Store any leftovers in the fridge for up to five days. This would be a great dish to portion out for a quick and easy meal prep, too!

Ingredients
  

  • 1 package gluten-free pasta (penne, fusilli, rotini, or shells are great)
  • 2 1/2 cups cherry or grape tomatoes
  • 1 block vegan feta cheese (I used 'Violife' brand)
  • 2 tbsp olive oil
  • 2-4 cloves garlic, minced
  • zest of 1 lemon
  • 1 tsp dried oregano
  • 1/2 tsp salt, pepper to taste
  • 1/2 cup fresh basil, chopped

Instructions
 

  • Preheat oven to 400°F, and cook pasta noodles according to package directions.
  • In a medium casserole dish, add the tomatoes, minced garlic, olive oil, salt and pepper, and lemon zest. Mix until well combined.
  • Create a space in the middle of the mixture and place the block of vegan feta cheese inside it. Sprinkle the oregano over everything.
  • Bake in the oven on the top rack uncovered for 25-30 minutes, until the cheese has melted and the tomatoes have roasted and released their juices.
  • Add the cooked pasta directly into the casserole dish and mix until its well combined in the sauce. Serve and garnish with fresh chopped basil. Enjoy!
