Ingredients & Inspiration

If you love healthy and high protein desserts then you’re going to be obsessed with these Healthy Protein Brownies! If I ever get an intense chocolate craving, one of the treats I most frequently wish I had (but never seem to magically have on hand at all times) are brownies. Thick, gooey, fudgy, borderline-undercooked, melt-in-your-mouth brownies. Oh, and they’ve got to be packed with chocolate chips. The meltier the better!
But let’s be real… that kind of brownie is usually laden with sugar, fat and carbs and is not something I’d call a health food (although, I would call it a mental health food 😉) … until now! My Healthy Protein Brownies are not only the most decadent tasting, chocolatey heavenly morsel you’ll ever eat, they’re made with whole plant foods! Made with wholesome ingredients like black beans, tahini, raw cacao and flaxseed, it’s a treat you can feel good about!
I promise that you have most of these ingredients already, and if you don’t they’re cheap and easy to get:

- canned black beans
- ground flaxseed
- tahini
- Vedge Nutrition Chocolate Peanut Butter Cup Protein Powder
- cacao powder
- vanilla
- maple syrup
- baking powder + soda
- salt
- dark or semi-sweet chocolate chips
How to Make Healthy Protein Brownies

These Healthy Protein Brownies come together in a food processor and go straight into the baking pan:
- Preheat your oven to 350°F and line a 9×9 baking tray with parchment paper.
- Add all the ingredients except the chocolate chips into the bowl of your food processor and blend on high-speed until a really thick brownie batter forms. If your food processor is having a hard time processing, add a couple tbsp of cold water at a time until it starts blending better.
- Remove the blade from the food processor and stir in the chocolate chips, reserving a couple tbsp for the topping. Spread the brownie batter into a smooth even layer in your baking tray, sprinkle the top with chocolate chips and bake for 25 to 30 minutes, until the top looks a bit crackled.
- Let cool in the pan for 10 minutes, then lifting it up from the edges of the parchment paper, transfer it to a cooling rack to cool a further 10 to 15 minutes before slicing. Enjoy warm!
Note:
The brownies will be very moist and borderline undercooked immediately after removing from the oven. After cooling for 25-30 minutes they’ll firm up a bit but will still be decadently melt-in your mouth, moist and fudgy!

- Preheat your oven to 350°F and line a 9×9 baking tray with parchment paper.
- Add all the ingredients except the chocolate chips into the bowl of your food processor and blend on high-speed until a really thick brownie batter forms. If your food processor is having a hard time processing, add a couple tbsp of cold water at a time until it starts blending better.**To do this without a food processor, you'll need to mash up the black beans really well in a shallow bowl with a fork until they are completely mashed. This will take time, but it can be done. Then transfer to a stand mixer (or a large bowl and use a hand mixer) and add the wet ingredients, then mix on low until a thick wet mixture begins forming. Then add all remaining dry ingredients and continue mixing, gradually increasing speed until the mixture becomes a very thick batter. Add a few tbsp water as needed to help it mix. Note: The brownie batter won't be as smooth with this method, and you'll have some lumps of black beans, but they won't be too noticeable once they bake.
- Remove the blade from the food processor and stir in the chocolate chips, reserving a couple tbsp for the topping. Spread the brownie batter into a smooth even layer in your baking tray, sprinkle the top with chocolate chips and bake for 25 to 30 minutes, until the top looks a bit crackled.
- Let cool in the pan for 10 minutes, then lifting it up from the edges of the parchment paper, transfer it to a cooling rack to cool a further 10 to 15 minutes before slicing. Enjoy warm!
