Seriously, if pumpkin spice had a couple best friends they would definitely be apples and cranberries. And if they had a favourite hangout spot it would be in this baked oatmeal. 😉 This perfectly comforting baked oatmeal has quickly become one of my most-loved breakfasts this fall! Warming, flavourful and cozy (not to mention healthy!) this quick and easy recipe is a perfect make-ahead meal for busy weekdays.

INGREDIENTS

This Pumpkin Spice Cranberry Apple Baked Oatmeal uses simple, hearty and inexpensive pantry-staples that you most likely already have, with a few delicious seasonal touches.

  • Rolled Oats & Ground Oats: You can easily grind your own oats into a flour using a blender or coffee grinder. This helps to thicken the mixture and give variation in texture.
  • Canned Pumpkin Purée & Non Dairy Milk: For our delicious pumpkin-y tasting and creamy base.
  • Honeycrisp Apples & Fresh Cranberries: Adds delightful juicy, sweet and tart freshness. Feel free to use any other variety of apple and frozen cranberries if that’s what’s available to you.
  • Yummy Warming Spices: Pumpkin Pie Spice, Cinnamon, Ginger and Vanilla add warm spice and fragrant flavour.

HOW TO MAKE PUMPKIN SPICE CRANBERRY APPLE BAKED OATMEAL

The best part of about this Pumpkin Spice Cranberry Apple Baked Oatmeal is that once all the ingredients are mixed together, you can just pop it in the oven and walk away! No need to stand over the stove stirring and monitoring it.

  1. In a casserole dish, combine all the dry ingredients together.
  2. In a large mixing bowl, whisk all the wet ingredients until well combined, and pour into the casserole dish with the dry ingredients. Mix together until no dry spots remain.
  3. Fold in the fresh cranberries and chopped apples, smooth into an even layer, then bake until golden around the edges and slightly cracked on top, about 30 minutes.
  4. Cut into portions, serve and garnish with chopped walnuts and a drizzle of maple syrup. Enjoy!

FALL INTO FLAVOUR

I really love that this yummy oatmeal combines so many delicious fall flavours into one dish. Each bite is sweet, tart and spiced. Plus, this breakfast is nutritious, low calorie (thanks to all that fibre!), and filling. Save yourself some time during the week and make this ahead of time, as it makes for great meal prep and keeps well in the fridge for 5 days.

Ingredients
  

  • 2 cups rolled oats (gluten-free if needed)
  • ¼ cup ground oats (processed in food processor or in a coffee grinder)
  • ¼ cup coconut sugar (or sub brown sugar, date sugar)
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • cup pumpkin purée
  • cup unsweetened nondairy milk
  • 2 flax 'eggs' (2 tbsp ground flax, 6 tbsp water, stir, sit 10 mins)
  • 1 tsp vanilla extract
  • pinch of salt
  • 1 cup fresh or frozen cranberries
  • 1 honeycrisp apple, chopped (sub for any apple of choice if needed)

Instructions
 

  • Preheat your oven to 350°F and set your baking rack to the middle.
  • Whisk all the dry ingredients, minus the fresh fruit, in a large casserole dish until well combined.
  • In a large bowl, mix all the wet ingredients until it forms a uniform, thick liquid mixture. Pour into the dry ingredients and stir until no dry spots remain.
  • Fold in the cranberries and apples until well combined, and smooth the oatmeal into an even layer.
  • Bake for 30 to 35 minutes until the top is slightly cracked and golden. Cut into portions, serve and garnish with a drizzle of maple syrup and chopped walnuts. Enjoy!
