Ingredients
  

  • 2 cups rolled oats (gluten-free if needed)
  • ¼ cup ground oats (processed in food processor or in a coffee grinder)
  • ¼ cup coconut sugar (or sub brown sugar, date sugar)
  • 1 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • cup pumpkin purée
  • cup unsweetened nondairy milk
  • 2 flax 'eggs' (2 tbsp ground flax, 6 tbsp water, stir, sit 10 mins)
  • 1 tsp vanilla extract
  • pinch of salt
  • 1 cup fresh or frozen cranberries
  • 1 honeycrisp apple, chopped (sub for any apple of choice if needed)

Method
 

  1. Preheat your oven to 350°F and set your baking rack to the middle.
  2. Whisk all the dry ingredients, minus the fresh fruit, in a large casserole dish until well combined.
  3. In a large bowl, mix all the wet ingredients until it forms a uniform, thick liquid mixture. Pour into the dry ingredients and stir until no dry spots remain.
  4. Fold in the cranberries and apples until well combined, and smooth the oatmeal into an even layer.
  5. Bake for 30 to 35 minutes until the top is slightly cracked and golden. Cut into portions, serve and garnish with a drizzle of maple syrup and chopped walnuts. Enjoy!
