Inspiration & Ingredients

These tofu shawarma wraps were inspired by the magic of traditional shawarma: thinly sliced, flavour-packed meat roasted on a rotating spit until the edges get deliciously caramelized. We’re giving that same idea a plant-based makeover by shaving extra-firm tofu into thin, uneven slices using the slicing side of a box grater. The result? Plenty of nooks and crannies to soak up that dreamy marinade, with crispy little edges that make every bite ridiculously good.

And because one side quest is never enough, we’re making quick-pickled red onions and a creamy garlic sauce that sits somewhere between toum and tzatziki. Pile everything into a warm pita or thick naan, add your favourite fresh veggies, and prepare for a wrap that’s absolutely shawar-mazing.

Here’s what you’ll need:

Tofu shawarma
  • 1 block extra-firm tofu
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2-3 cloves garlic, minced
  • 2 tbsp shawarma spice blend
  • 1 tbsp soy sauce or tamari (if using in your marinade)
  • 2 tbsp vegan yogurt or sour cream
  • Salt and black pepper, to taste
Shawarma spice blend
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp paprika
  • 1Β½ tsp garlic powder
  • 1 tsp ground turmeric
  • Β½ tsp ground cinnamon
  • Β½ tsp ground allspice
  • Β½ tsp black pepper
  • ΒΌ tsp ground cardamom
  • ΒΌ tsp cayenne (optional)
  • 1 tsp salt
Quick Pickled Red Onions
  • 1 red onion, thinly sliced
  • 1 cup hot water

for serving
  • Pita bread or thick naan (white tortillas work too!)
  • Fresh chopped tomatoes
  • Cucumber
  • Lettuce or arugula
  • Quick-pickled red onions

Use whatever fresh veggies you have on hand. This is a great clean-out-the-fridge situation, and nobody needs to know your wrap is also doing the noble work of rescuing that half-cucumber.

Why You’ll Love Tofu Shawarma

It’s tofu in disguise. A Delicious, delicious disguise

Shaving tofu into thin slices gives it a totally different personality from your usual tofu cubes. The irregular pieces catch the marinade, roast beautifully, and develop crispy edges that bring all the shawarma-inspired vibes. Even tofu skeptics might want to swipe right on this one.

That marinade means business

Cumin, coriander, paprika, turmeric, cinnamon, and all those warming spices bring earthy, savoury, aromatic flavour to every bite. A little lemon brightens everything up, while the garlic adds that irresistible savoury punch.

Three recipes, one seriously good wrap

You’ve got spiced tofu, tangy quick-pickled onions, and a creamy garlic sauce all coming together in one glorious package. Each component brings something different: crispy, creamy, crunchy, fresh, and zingy. It’s a whole flavour party, and everyone’s invited.

The garlic sauce is dangerously good

This sauce is a delicious little hybrid of toum and tzatziki, with vegan mayo for richness, vegan sour cream for tang, fresh garlic for a kick, lemon for brightness, and dried dill for that herby finish. It’s creamy, punchy, and absolutely not here to be subtle.

Perfect for a fun weeknight dinner.

While the tofu marinates, you can whip up the onions and sauce. Everything comes together with minimal fuss, and you can prep the components ahead of time for easy lunches or quick dinners throughout the week.

How to Make Tofu Shawarma

Instructions
  1. Using the slicing side of a box grater, carefully shave the extra-firm tofu into thin, irregular slices. This is the secret to creating those lovely, uneven pieces that resemble shaved shawarma meat.
  2. In a bowl, mix the marinade ingredients with your shawarma spice blend until well combined. Add the shaved tofu and gently toss to coat, taking care not to break up the delicate slices too much.
Let the tofu marinate for about 20 minutes while you tackle the toppings. A little flavour soak makes a big difference!
  3. Thinly slice one red onion and pack it into a clean jar. In a separate container, combine 1 cup hot water, 1 cup white vinegar, 2 teaspoons sugar, and 1 teaspoon salt. Stir until the sugar and salt dissolve, then pour the mixture over the onions.
Let them sit for about 20 minutes while the tofu marinates and you prepare the sauce. They’ll soften slightly and develop that bright, tangy flavour that cuts through the rich garlic sauce and warmly spiced tofu.
  4. In a bowl, combine the vegan mayonnaise, vegan sour cream, lemon juice, salt, finely minced or microplaned garlic, and dried dill. Stir until smooth and creamy.
Give it a taste and adjust the lemon, garlic, or salt to your liking. If you have a few extra minutes, let the sauce chill while the tofu roasts so the flavours have time to mingle.
  5. Preheat your oven to 400Β°F (200Β°C).
Spread the marinated tofu in a single layer on a parchment-lined baking tray. Roast for about 25 minutes, turning the tofu halfway through, until the pieces are cooked through and the edges are golden and crispy.
Keep an eye on the thinner pieces toward the end, as they may crisp up faster than the thicker slices. If you love extra-crispy bits, give them a few additional minutes as needed.
  6. Warm your pita bread or naan, then slather on a generous amount of creamy garlic sauce. Add the roasted tofu shawarma, chopped fresh veggies, arugula, and a hefty handful of pickled red onions.
  7. Fold it up, tuck in the sides, and prepare for a deliciously messy situation. Enjoy your shawarma!

tips for the Best tofu Shawarma

  1. Use extra-firm tofu. It holds together better when shaved and tossed in the marinade. Softer tofu is more likely to crumble into pieces.
  2. Don’t skip the marinade time. Even 20 minutes helps the tofu absorb the aromatic spices. If you have more time, you can refrigerate it for longer.
  3. Give the tofu some breathing room. Spread it out across the baking tray instead of piling it up. Crowding traps moisture and makes it harder to achieve those crispy edges. Use two trays if necessary.
  4. Don’t expect every piece to crisp equally. The beauty of shaved tofu is the mix of textures. Thin edges may become crunchy, while thicker pieces stay tender and juicy.
  5. Use the right bread. Pita or thick naan is ideal for holding all those saucy fillings. A soft flour tortilla works in a pinch, but a sturdier bread gives you more of that classic shawarma-wrap experience.
  6. Make the sauce ahead. The garlic flavour gets more pronounced as it sits. If you’re sensitive to raw garlic, start with fewer cloves and add more to taste.
  7. Prep the components separately. Store the tofu, sauce, pickled onions, and fresh vegetables in separate containers. Assemble the wraps just before eating to keep everything fresh and prevent soggy bread.

FAQ

Can I make tofu shawarma in the air fryer?

Yes! Arrange the marinated tofu in a loose layer in your air-fryer basket and cook at around 375–400Β°F (190–200Β°C), checking frequently and shaking or turning the pieces as needed. Work in batches if necessary so the tofu crisps rather than steams. Cooking time will vary depending on the thickness of your slices and your air fryer.

Can I make this recipe gluten-free?

Absolutely! Use certified gluten-free tamari instead of soy sauce if needed, and serve the tofu in gluten-free pita or tortillas. Check the labels on your vegan mayo, sour cream, and spice blend as well.

Can I make the tofu shawarma ahead of time?

Yes! You can marinate the tofu, prepare the pickled onions, and mix the garlic sauce ahead of time. Roast the tofu when you’re ready to eat, or roast it in advance and reheat it in the oven or air fryer to bring back some of its crispiness.

How should I store leftovers?

Store the roasted tofu in an airtight container in the refrigerator for up to 3–4 days. Refrigerate the garlic sauce and pickled onions separately, and keep chopped fresh vegetables in their own containers. For the best texture, assemble the wraps just before serving.

What can I use instead of tofu?

Soy curls, seitan, or thinly sliced mushrooms can all work with the shawarma marinade. Chickpeas are another easy option, although they’ll give you a different texture. Adjust the cooking time depending on what you use.

Is the garlic sauce traditional toum?

Not quite! Traditional toum is a Lebanese garlic sauce made by emulsifying garlic and oil, often with lemon juice and salt. This version combines vegan mayo and vegan sour cream for an easier, creamier sauce with a little tzatziki-inspired tang from the lemon and dill. It’s a delicious hybrid rather than a traditional toum or tzatziki.
