Method
- Add all of the ingredients into a high-speed blender. Secure the lid, and blend on high power for 30-45 seconds, until the batter is perfectly smooth and creamy.
- Let the batter sit for 5 minutes to allow the baking powder and apple cider vinegar to fluff everything up. You should start to see some bubbles forming on the surface.
- Pour ¼ cup portions of batter into a hot greased skillet, and cook for 2-3 minutes on each side, until golden brown. Serve with your favourite toppings and enjoy hot!
