Vegan Protein Pancakes

These tasty Vegan Protein Pancakes have 15g of plant-based protein per serving and use all healthy, whole food ingredients! Perfect for those wanting a comforting, high-protein breakfast.

Ingredients
  

  • 1 cup rolled oats, gluten-free if necessry
  • 4 tbsp Complement unflavoured protein powder
  • 1 ripe spotty banana
  • ¼ cup hemp seeds
  • ½ cup + 2 tbsp soy milk (can sub any plant milk but the recipe will not have as much protein)
  • 2 tsp baking powder
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tbsp nut or seed butter
  • 1 tbsp maple syrup
  • ¼ tsp salt

Method
 

  1. Add all of the ingredients into a high-speed blender. Secure the lid, and blend on high power for 30-45 seconds, until the batter is perfectly smooth and creamy.
  2. Let the batter sit for 5 minutes to allow the baking powder and apple cider vinegar to fluff everything up. You should start to see some bubbles forming on the surface.
  3. Pour ¼ cup portions of batter into a hot greased skillet, and cook for 2-3 minutes on each side, until golden brown. Serve with your favourite toppings and enjoy hot!
