Tahini Parmesan Broccoli

This flavourful Tahini Parmesan Broccoli has ruined all other broccoli recipes for me! Perfectly roasted broccoli florets get tossed in a rich, lemony and garlicky tahini sauce, then wrapped up in a cheesy hug. Seriously what is not to love? Guaranteed it will convert the most staunch broccoli haters into lovers.

Inspiration & Ingredients

I originally created my recipe for Tahini Parmesan Broccoli to be a holiday side dish for around Thanksgiving and Christmas because I felt like broccoli was one of those vegetables that never got considered. It was always the potatoes, yams, and brussels sprouts that took the spotlight. Where was the love for broccoli?!

It ended up being such a hit with my family and in-laws that it’s since become a year-round staple in my house, because it is so good. Unbelievably good, in fact! I make it at least once a month, and even my broccoli-hating brother in law goes for seconds of it (which is a real boost for my ego).

Broccoli is basically the perfect vessel for sauces, like the lemony, garlicky tahini sauce it gets tossed in. The florets act as little sponges that absorb all the good flavour and then once roasted, they get become tender but still get little crispy edges. Literal perfection!

A final layer of parmesan cheese gets melted on top with some freshly cracked black pepper and ba-da-boom-bing, you have the most decadent broccoli recipe that took hardly any effort to whip up!

Tahini Parmesan Broccoli is dynamite on it’s own, but is also fabulous:

Ingredients you’ll need (Other than broccoli):
  • 3 tbsp tahini
  • 3 tbsp lemon juice
  • 2 soy sauce or tamari, if gluten-free
  • 3 cloves garlic, minced
  • ⅓ cup vegan parmesan cheese
  • black pepper to taste

Why You Need to Make Tahini Parmesan Broccoli

Other than it being the best broccoli you’ll ever eat?

It’s a one-bowl recipe that takes almost no effort. Bonus points if you buy pre-chopped broccoli florets which means almost no chopping for you!

It’s also:

  1. A fantastic way to save that 10-day-old crown of broccoli in the back of your crisper drawer.
  2. Perfect as a party appetizer or holiday side dish.
  3. Naturally dairy-free and packed with flavour.
  4. Easy enough for weeknights but impressive enough for guests.
  5. One of those recipes that makes people say, “Dang, I wish all vegetables tastes this good.”

How to Make Tahini parmesan Broccoli

Instructions
  1. Preheat oven to 450°F and set rack to the top.
  2. Add all the sauce ingredients to a large mixing bowl and whisk until well combined. Add the broccoli florets and toss until each piece is coated in the sauce.
  3. Transfer to a large parchment lined baking tray and spread evenly. Add a few grinds of fresh black pepper and bake for 10 minutes.
  4. Remove from the oven quickly and carefully, and sprinkle on the parmesan cheese. Return to oven to bake for a final 3 to 4 minutes until the cheese has melted.
  5. Serve, add a squeeze of lemon juice (optional) and enjoy!

  • 2 large crowns broccoli, cut into florets (about 5 cups)
  • 3 tbsp tahini
  • 3 tbsp lemon juice
  • 2 tbsp soy sauce or tamari, if gluten-free
  • 3 cloves of garlic, finely minced
  • cup vegan parmesan cheese shreds
  • black pepper, to taste

Method
