Vegan Protein Pancakes (Gluten-Free!)

These tasty Vegan Protein Pancakes have 15g of plant-based protein per serving and use all healthy, whole food ingredients! Perfect for those wanting a comforting, high-protein breakfast. You can easily have a 30g+ breakfast if you have a stack of 4 of them! Soft, slightly chewy with just enough golden brown crispness, these are my definition of a perfect pancake.

Ingredients & Inspiration

As someone who eats a high-protein vegan diet, I’m always trying to find ways to add extra protein to my meals… especially breakfast! I find that if I start my day with extra protein I have more energy, and am in a better mood. These Vegan Protein Pancakes are made with all healthy, whole food (and gluten-free!) ingredients, plus one of my favourite plant-based protein powders ever!

I love the unflavoured protein powder from Complement for baking, as sometimes I just want my baking, or pancakes in this case, to just taste like pancakes! It’s also one of the cleanest protein powders I’ve come across in my 8 years of being vegan, as it, too, is also made with just 6 organic, whole food vegan ingredients! I just like knowing exactly what I’m putting into my body, and with Complement I know that I never, ever have to think twice. 😉

As for the rest of the ingredients, you likely have. most or all of these ingredients in your kitchen already!

How to Make Vegan Protein Pancakes

The steps to making Vegan Protein Pancakes are basically the same as any pancake recipe, except that we are making the batter in a blender.

  1. Add all of the ingredients into a high-speed blender. Secure the lid, and blend on high power for 30-45 seconds, until the batter is perfectly smooth and creamy.
  2. Let the batter sit for 5 minutes to allow the baking powder and apple cider vinegar to fluff everything up. You should start to see some bubbles forming on the surface of the batter.
  3. Pour ¼ cup portions of batter into a hot greased skillet, and cook for 2-3 minutes on each side, until golden brown. Serve with your favourite toppings and enjoy hot!

Ingredients
  

  • 1 cup rolled oats, gluten-free if necessry
  • 4 tbsp Complement unflavoured protein powder
  • 1 ripe spotty banana
  • ¼ cup hemp seeds
  • ½ cup + 2 tbsp soy milk (can sub any plant milk but the recipe will not have as much protein)
  • 2 tsp baking powder
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tbsp nut or seed butter
  • 1 tbsp maple syrup
  • ¼ tsp salt
