Pumpkin Pie Oatmeal (High-Protein!)
There’s nothing like a warm, cozy bowl of oats in the morning that tastes like a warmly spiced dessert… introducing my high-protein Pumpkin Pie Oatmeal! It’s got all the flavours of pumpkin spice and a luxuriously creamy texture that brings all the warm, fuzzy vibes.

Ingredients & Inspiration
I’m a creature of habit, which means that six out of seven mornings you’ll be sure to find me eating a bowl of oatmeal for breakfast. It’s always a filling, energy-packed meal that never fails to fuel me and keep me full until lunch time. When autumn comes around, my mind instantly switches gears to ‘how can I make this more cozy?’ 🍁🍂 Enter my Pumpkin Pie Oatmeal.
Warmly spiced, creamy and perfectly sweet, it tastes damn near like pumpkin pie filling! It’s practically on repeat once October hits, and with 20g protein per serving, it helps me reach my daily protein goals! ‘Cause these muscles aren’t gonna build themselves, ya know. 😉

The ingredients aren’t complicated or hard to find, and better yet, they’re healthy! Here’s what you need:
- old fashioned rolled oats (gluten-free if needed)
- soy milk (or other plant milk)
- water
- salt
- pumpkin purée (store-bought or check out my recipe for an easy homemade version!)
- vanilla plant-based protein powder
- pumpkin pie spice (DIY recipe below)
- maple syrup
- vanilla extract
How to Make Pumpkin Pie Oatmeal
Pumpkin Pie Oatmeal is a simple one-pot meal that comes together in 20 minutes with minimal prep involved. Feel free to cut the recipe in half or double it if you want to meal prep it for the week!

Instructions
- Into a medium sized pot, pour in the water and soy milk and bring to a low boil over medium-high heat. Then stir in the oats, and reduce the heat to medium-low, allowing the oats to cook at a rapid simmer.
- Once about 75% of the liquid has been absorbed and the oats have plumped up and cooked most of the way through, after about 6 to 8 minutes, stir in the salt, pumpkin purée, maple syrup, pumpkin pie spice and vanilla extract until you have a very creamy consistency.
- Continue to cook the oats for a further 4 to 5 minutes, allowing the liquid to become creamier and thicker in consistency.
- Remove the pot from the heat and stir in the protein powder, until completely combined into the oats with no lumps or dry spots remaining.
- Serve into bowls and garnish with your favourite toppings: nut butter, banana, chopped pecans, pumpkin seeds, dried cranberries and hemp seeds are some of my favourites!

Tip: Make your own pumpkin SPICE blend at home
You’ll need pumpkin spice to make my Pumpkin Pie Oatmeal. But, if you don’t have any on hand, you can make a small batch of your own homemade blend super easily. In a mason jar, add the following spices and shake vigorously (with the lid on!) to combine:
- 3 tbsp ground cinnamon
- 2 tsp ground ginger
- 2 tsp nutmeg
- 1.5 tsp ground allspice
- 1.5 tsp ground cloves
