Ingredients & Inspiration

Pancakes are the ultimate. They simply. Just. Are. Fluffy stacks of happiness and childhood nostalgia, coated in a sea— I mean, a gentle drizzle of maple syrup… pure heaven. And these Pumpkin Spice Protein Pancakes are no exception, either. Richly spiced with all the autumnal flavours of pumpkin pie, plus an extra nourishing boost of protein to make them a little more than dessert for breakfast (’cause let’s be real, pancakes are basically just dessert that we are okay with eating for breakfast).

The smell that fills my house when I make these is to die for, people. And for all the deliciousness they bring to the table, they also bring some serious nourishment, too. Packed with tons of healthy whole plant foods and lots of protein, they’re more than just something that tastes good, but makes you feel good!

The ingredients aren’t complicated or hard to find, and better yet, they’re healthy! Here’s what you need:

  • old fashioned rolled oats
  • vanilla plant-based protein powder
  • canned pumpkin purée (or check out my recipe for an easy homemade version!)
  • hemp seeds
  • soy milk (or any other plant milk)
  • baking powder
  • maple syrup
  • apple cider vinegar
  • vanilla extract
  • pumpkin pie spice (DIY recipe below)
  • PBFit powdered peanut butter
  • salt

How to Make Pumpkin Spice protein Pancakes

The batter for Pumpkin Spice Protein Pancakes easily whips up in a blender, no extra dishes required!

Instructions

  1. Add all of the ingredients into a high-speed blender. Secure the lid, and blend on high power for 15 to 30 seconds, until the batter is mostly smooth and creamy, but with slight texture remaining from the oats.
  2. Let the batter sit for 5 minutes to allow the baking powder and apple cider vinegar to fluff everything up. You should start to see some bubbles forming on the surface.
  3. Pour ¼ cup portions of batter into a hot greased skillet, and cook for 3 to 4 minutes on each side, until golden brown. Serve with your favourite toppings and enjoy hot!

Tip: Make your own pumpkin SPICE blend at home

You’ll need pumpkin spice to make my Pumpkin Spice Protein Pancakes. But, if you don’t have any on hand, you can make a small batch of your own homemade blend super easily. In a mason jar, add the following spices and shake vigorously (with the lid on!) to combine:

  • 3 tbsp ground cinnamon
  • 2 tsp ground ginger
  • 2 tsp nutmeg
  • 1.5 tsp ground allspice
  • 1.5 tsp ground cloves

  • 1 cup old fashioned rolled oats (gluten-free if needed)
  • 1 scoop vanilla plant-based protein powder [I used Good Protein's High-Protein Powder, use code JANELLEC30 for 30% discount]
  • ½ cup pumpkin purée (NOT pumpkin pie filling)
  • ¼ cup hemp seeds
  • 1 cup unsweetened soy milk (or other plant milk)
  • 2 tbsp PBFit powdered peanut butter (sub 1 tbsp other nut/seed butter)
  • 2 tsp baking powder
  • 2 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • ¼ tsp salt

  3. Pour ⅓ cup portions of batter into a hot greased skillet, smooth into flat circles with a spoon, and cook for 3 to 4 minutes on each side, until golden brown. Serve with your favourite toppings and enjoy hot!
